🛒 Ingredients
1 lb ground beef or shredded cooked chicken
1 cup shredded cheddar cheese
½ cup shredded Monterey Jack cheese (optional)
1 small onion, finely chopped
2 garlic cloves, minced
½ tsp cumin
½ tsp paprika
½ tsp chili powder
Salt & black pepper to taste
8 large flour tortillas
2 tbsp vegetable oil
½ cup salsa or enchilada sauce
👩🍳 Instructions
1️⃣ Cook the Filling
Heat oil in a skillet over medium heat.
Add onion and cook until soft.
Add garlic and cook 30 seconds.
Add beef (or chicken), cumin, paprika, chili powder, salt, and pepper.
Cook until meat is fully done and flavorful.
Stir in salsa. Remove from heat and let cool slightly.
Mix in both cheeses.
2️⃣ Assemble
Spoon filling into the center of each tortilla.
Fold sides inward, then roll tightly like a burrito.
3️⃣ Cook Until Crispy
Pan-Fry Method (best at home):
Heat a thin layer of oil in a pan.
Fry chimichangas seam-side down first until golden and crispy on all sides.
OR Oven Method (lighter):
Brush chimichangas with oil.
Bake at 200°C (400°F) for 20 minutes, turning once.
🥗 Serve With
Sour cream, salsa, guacamole, shredded lettuce, and rice.
