Here’s a classic Christmas pineapple ball recipe

1 cup well-drained, pureed pineapple

1/2 cup sweetened condensed milk

1 cup shredded coconut (plus extra for coating)

1/2 cup crushed biscuits (graham crackers or digestive biscuits)

1/4 cup chopped nuts (optional – walnuts or almonds work)

1/2 teaspoon vanilla extract (optional)

Drain the pineapple well, squeezing out any excess juice so the mixture isn’t soggy.

 

In a bowl, combine the pineapple, condensed milk, coconut, biscuits, nuts, and vanilla until well blended.

 

Cover the bowl and refrigerate for 20-30 minutes until firm.

 

Shape the mixture into small balls.
