Ingredients:
Brie Bites:
200 g Brie cheese, chilled and cut into 1-inch cubes (7 oz / about 1½ cups)
1/2 cup walnuts, finely chopped (60 g / 2 oz)
1/2 cup breadcrumbs or panko (30 g / ~1 cup)
1/2 teaspoon dried thyme or rosemary (1 g)
1/4 teaspoon black pepper (1 g)
Breading Station:
1/2 cup all-purpose flour (60 g / 2 oz)
2 large eggs, beaten
1 tablespoon milk (15 ml)
For Frying or Baking:
Vegetable or olive oil spray (for baking)
OR
Neutral oil for shallow frying (120 ml / 1/2 cup, approx.)
Cranberry Honey Glaze:
1/2 cup fresh or frozen cranberries (60 g / 2 oz)
3 tablespoons honey (45 ml / 60 g)
2 tablespoons water (30 ml)
1 teaspoon lemon or orange juice (5 ml)
Pinch of salt
Optional Garnish:
Fresh thyme leaves (3 g)
Extra chopped walnuts
Directions:
Place Brie cubes in the freezer for 15–20 minutes to firm up.
In a shallow bowl, mix chopped walnuts, breadcrumbs, dried herbs, and black pepper.
Set up a breading station:
– Bowl 1: flour
– Bowl 2: beaten eggs mixed with milk
– Bowl 3: walnut breadcrumb mixture
Roll each Brie cube in flour, dip into egg mixture, then coat well in walnut crumbs.
Press gently to ensure full coverage.
Place coated Brie bites on a tray and chill again for 10 minutes.
Baking option:
Preheat oven to 425°F / 220°C.
Place Brie bites on a parchment-lined tray and lightly spray with oil.
Bake for 10–12 minutes, until golden and just beginning to melt.
Frying option:
Heat oil in a shallow pan over medium heat.
Fry Brie bites for 30–45 seconds per side, until golden brown.
Transfer to paper towels to drain.
Cranberry Honey Glaze:
Combine cranberries, honey, water, citrus juice, and salt in a small saucepan.
Simmer over medium heat for 8–10 minutes, until cranberries burst and sauce thickens slightly.
Remove from heat.
Arrange warm Brie bites on a serving platter.
Drizzle with cranberry honey glaze and garnish with fresh thyme and extra walnuts if desired.
Serve immediately while gooey inside.
