8 chicken legs (drumsticks)
2 cups buttermilk
1 1/2 cups all-purpose flour
1 tsp paprika
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
1/2 tsp cayenne pepper (optional for heat)
Vegetable oil for frying

Soak the Chicken
Place chicken legs in a bowl and pour in the buttermilk.
Cover and refrigerate for at least 1 hour (or overnight for best flavor).
Prepare the Coating
In a shallow dish, mix flour, paprika, garlic powder, salt, pepper, and cayenne if using.
Dredge the Chicken
Remove chicken from buttermilk, letting excess drip off.
Coat each piece thoroughly in the seasoned flour.
Fry
Heat about 2 inches of oil in a large skillet or deep fryer to 350°F (175°C).
Fry chicken legs in batches for 12–15 minutes, turning occasionally, until golden brown and cooked through (165°F inside).
Drain and Serve
Place fried chicken on paper towels to drain. Let cool slightly and serve hot with your favorite sides!
