
Ingredients:
1 lb lean ground beef
4 to 6 medium Russet potatoes
1 packet (1 oz) taco seasoning
1/2 cup water
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup chopped green onions
1/2 cup diced tomatoes
Instructions:
Preheat oven to 400°F. Wash and scrub potatoes, then pierce each one with a fork. Bake for 45–50 minutes until tender.
Meanwhile, cook the ground beef in a skillet over medium heat until browned. Drain any excess grease.
Stir in the taco seasoning and 1/2 cup water. Simmer for 5 minutes until thickened.
Slice open the baked potatoes and fluff the insides with a fork. Spoon seasoned beef over the top.
