🌮 Mexican Fiesta Casserole 🎉
Ingredients:
🥩 1 pound lean ground beef
🥫 1 can (15 ounces) Ranch Style beans
🌽 2 cups tortilla chips, crushed
🍅 1 can (10 ounces) Ro-Tel tomatoes (diced tomatoes with green chilies)
🧅 1 onion, chopped
🧀 2 cups shredded cheddar cheese
🌮 1 packet taco seasoning
🍗 1 can (10.5 ounces) cream of chicken soup
Directions:
1. Preheat your oven to 350°F (175°C).
2. In a large skillet, cook the ground beef and onion over medium heat until the meat is browned. Drain any excess fat.
3. Stir in the taco seasoning, Ro-Tel tomatoes, Ranch Style beans, and cream of chicken soup. Mix well and heat through.
4. In a greased 9×13-inch baking dish, layer half of the crushed tortilla chips.
5. Pour the meat mixture over the chips, then top with half of the cheese.
6. Add the remaining chips and cheese on top.
7. Bake for 20–25 minutes, or until the cheese is melted and bubbly.
8. Garnish with fresh cilantro, diced tomatoes,
sour cream, or jalapeños if desired.
