Ingredients:
1 lb (450 g) chicken cutlets, thinly sliced
1/2 cup all-purpose flour
1 egg, beaten
1 cup Italian-style breadcrumbs
1/4 cup grated Parmesan cheese
Salt & black pepper, to taste
3 tbsp olive oil, divided
1 cup cherry tomatoes, halved
1 burrata ball (or 2 small ones)
1/4 cup heavy cream
1 tsp fresh basil, chopped (plus extra for garnish)
Directions:
Prepare the Chicken:
Season chicken cutlets with salt and pepper. Dredge each cutlet in flour, dip in beaten egg, then coat with a mixture of breadcrumbs and Parmesan.
Cook the Chicken:
Heat 2 tbsp olive oil in a skillet over medium heat. Cook chicken cutlets 3–4 minutes per side until golden and cooked through. Remove and keep warm.
Make the Creamy Burrata Sauce:
In the same skillet, add 1 tbsp olive oil and sauté cherry tomatoes for 3–4 minutes until softened. Reduce heat to low and stir in heavy cream and torn pieces of burrata until creamy. Add chopped basil and season with salt and pepper. Pour sauce over chicken and garnish with extra basil. Serve immediately.
