Fried Alligator

Ingredients

1 lb alligator meat, cut into bite-size pieces

1 cup buttermilk

1–2 tbsp hot sauce

1 cup all-purpose flour

1/2 cup cornmeal

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and black pepper, to taste

Pinch of cayenne pepper (optional)

Vegetable oil, for frying

Lemon wedges, for serving

Instructions

Place the alligator meat in a bowl with buttermilk and hot sauce. Mix, cover, and marinate for 30–60 minutes.

In a separate bowl, combine flour, cornmeal, paprika, garlic powder, onion powder, salt, pepper, and cayenne.

Heat oil in a deep skillet or fryer to 350°F (175°C).

Remove the meat from the marinade, let excess drip off, then coat evenly in the seasoned flour mixture.

Fry in batches for 3–4 minutes, turning once, until golden brown and crispy.

Remove and drain on paper towels. Lightly season with salt if needed.

Serve hot with lemon wedges and your favorite dipping sauce. Serve and enjoy.
