Angel Hair Pasta With Lemon and Garlic

 

Ingredients:

● 1 teaspoon olive oil
● 2 garlic cloves, minced
● 1/2 cup white wine
● 1/4 cup fresh lemon juice
● 1 cup tomatoes, chopped
● 4 ounces angel hair pasta, spinach, dried
● 4 ounces angel hair pasta, semolina, dried
● 1/4 cup fresh basil, chopped
● 2 tablespoons parmesan cheese, freshly grated
Instructions:

Bring a large pot of water to a rolling boil over high heat and keep it boiling.

In a saute pan, warm the olive oil with the minced garlic over medium heat until the garlic just starts to turn golden.

Take the pan off the heat and carefully add the white wine.
Set the pan back over the heat.
Simmer 1 to 2 minutes, until the wine reduces by about half.

Mix in the lemon juice and the chopped tomatoes.
Pull the pan off the heat again.
Add the pasta to the boiling water and cook to your preferred doneness, 30 seconds to 1 minute.
Drain the pasta and transfer it to a warmed serving bowl.

Add the basil, parmesan, and black pepper, then spoon in the tomato mixture.

Toss everything together and serve right away.
