Ingredients
Mixed Greens
1 cup broccoli florets
1 cup green beans, trimmed
1 cup zucchini slices
2 cups fresh spinach
1 cup kale, chopped (stems removed)
1 tbsp olive oil
Salt and black pepper, to taste
Garlic Sauce
3 tbsp olive oil
4 cloves garlic, finely minced
1 tbsp lemon juice
1 tsp soy sauce or tamari
Optional: ¼ tsp red pepper flakes
Directions
Blanch & Sauté Greens: Bring a pot of salted water to a boil. Blanch broccoli and green beans for 2–3 minutes until bright green. Drain well.
Cook Remaining Greens: Heat olive oil in a large skillet over medium heat. Add zucchini and sauté 2–3 minutes. Add blanched vegetables, spinach, and kale. Toss until wilted and tender. Season lightly with salt and pepper.
Prepare Garlic Sauce: In a small pan over low heat, warm olive oil. Add minced garlic and cook gently 30–60 seconds until fragrant (do not brown). Stir in lemon juice, soy sauce, and optional red pepper flakes.
Combine & Serve: Drizzle garlic sauce over mixed greens, toss gently, and serve warm as a vibrant side dish or light main.
