Strawberry Pound Cake

 

Ingredients

For the Cake:

1 cup unsalted butter, softened

2 ½ cups granulated sugar

4 large eggs

3 cups all-purpose flour

½ teaspoon baking soda

½ teaspoon salt

1 cup sour cream

1 teaspoon vanilla extract

1 teaspoon strawberry extract (optional but amazing)

1 ½ cups fresh strawberries, finely chopped

1 tablespoon all-purpose flour (to toss strawberries)

For the Strawberry Glaze:

1 cup powdered sugar

2–3 tablespoons strawberry puree (blend fresh strawberries)

½ teaspoon vanilla extract

Instructions

Prep Oven & Pan

Preheat oven to 325°F (160°C). Grease and flour a bundt or loaf pan.

Cream Butter & Sugar

Beat butter and sugar until light and fluffy (about 3–4 minutes).

Add Eggs

Add eggs one at a time, mixing well after each.

Dry Ingredients

In a bowl, whisk flour, baking soda, and salt.

Combine

Add dry ingredients to the butter mixture alternately with sour cream.

Mix in vanilla and strawberry extract.

Fold Strawberries

Toss chopped strawberries with 1 tbsp flour, then gently fold into batter.

Bake

Pour into pan and bake 70–80 minutes, until a toothpick comes out clean.

Cool

Let cake cool 15 minutes, then invert onto a wire rack.

🍓 Strawberry Glaze

Whisk powdered sugar, strawberry puree, and vanilla until smooth.

Drizzle over cooled cake.

For extra strawberry flavor, swirl a little glaze into the batter before baking.
