Ultra Light & Delicious Yogurt Pancakes

 

🛒 Ingredients

(8–10 pancakes)

2 eggs

2 plain yogurts (125 g each)

1 packet vanilla sugar

150 g flour

2 teaspoons baking powder

1 pinch of salt

👩‍🍳 Instructions

Mix the base

In a bowl, whisk the eggs with the vanilla sugar until slightly pale.

Add yogurt

Add the two yogurts and mix until smooth and creamy.

Add dry ingredients

Sift in the flour, baking powder, and salt.

Mix gently until you get a smooth batter.

👉 Do not overmix — a few small lumps are fine.

Rest the batter (important!)

Let the batter rest for 10 minutes.

This step makes the pancakes extra fluffy.

Cook the pancakes

Heat a non-stick pan over medium heat and lightly grease it.

Pour small ladles of batter.

Flip

When bubbles appear on the surface, flip and cook the other side until golden.

Honey, maple syrup or chocolate spread

Fresh fruit or banana slices

Powdered sugar or cinnamon
