π Ingredients
4 boneless skinless chicken breasts (cut in half or pounded thin)
Salt & black pepper
2 tbsp olive oil
1 tbsp butter
1 cup mushrooms, sliced
3 cloves garlic, minced
1 cup heavy cream
Β½ cup chicken broth
Β½ tsp paprika
Β½ tsp dried thyme or oregano
ΒΌ cup grated parmesan cheese (optional but delicious)
Fresh parsley for garnish
π³ Instructions
1οΈβ£ Season chicken with salt, pepper and paprika.
2οΈβ£ Heat olive oil in a large pan over medium-high heat.
Add chicken and cook 4β5 minutes per side until golden. Remove and set aside.
3οΈβ£ In the same pan add butter and mushrooms.
Cook until mushrooms release their juice and turn golden.
4οΈβ£ Add garlic and thyme β cook 30 seconds.
5οΈβ£ Pour in chicken broth and scrape the pan.
Add cream and parmesan, stir and simmer 4β5 minutes until sauce thickens.
6οΈβ£ Return chicken to the pan. Spoon sauce over it and simmer 5 minutes until fully cooked.
7οΈβ£ Sprinkle with parsley and serve hot.
