Cajun Pork Tenderloin with Roasted Potatoes

 

🛒 Ingredients:

For the Pork Tenderloin:

1 pork tenderloin (about 1–1.5 lbs)

1 tbsp olive oil

1 tbsp Cajun seasoning

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

For the Roasted Potatoes:

1.5 lbs baby potatoes (halved)

2 tbsp olive oil

1 tsp garlic powder

1 tsp Cajun seasoning

Salt and pepper to taste

Fresh parsley (for garnish)

👩‍🍳 Directions:

Preheat your oven to 425°F (220°C).

Rub pork tenderloin with olive oil and all the seasonings. Let it sit while prepping the potatoes.

Toss halved potatoes with olive oil, garlic powder, Cajun seasoning, salt, and pepper. Spread on a baking sheet.

Sear the pork in a hot skillet for 2–3 minutes per side until browned, then place it on the baking sheet with the potatoes.

Roast everything together for 20–25 minutes, or until the pork reaches 145°F (63°C) inside and potatoes are tender and golden.

Rest the pork for 5 minutes before slicing. Sprinkle parsley over the potatoes.

Serve spicy, juicy pork tenderloin slices alongside crispy roasted potatoes for a bold and hearty meal!
