Coconut Cookies

 

Ingredients

• 1 cup (226g) unsalted butter, softened

• ¾ cup (150g) granulated sugar

• ½ cup (65g) powdered sugar

• 2 cups (250g) all-purpose flour

• 1½ cups (120g) desiccated coconut

• 1 teaspoon baking powder

• ½ teaspoon salt

• 1 large egg

• 1 teaspoon vanilla extract

 

Instructions

Cream the softened butter, granulated sugar, and powdered sugar together until light and fluffy. Beat in the egg and vanilla extract until smooth.

 

In another bowl, mix the flour, baking powder, salt, and desiccated coconut. Add the dry mixture to the butter mixture and combine gently to form a soft dough.

 

Scoop small portions and roll into balls, then flatten slightly on a parchment-lined baking tray. For extra crunch and flavor, sprinkle a little coconut on top of each cookie before baking.

 

Bake in a preheated oven at 170°C (340°F) for 12–15 minutes, or until the edges turn golden brown. Let the cookies cool on the tray for a few minutes before transferring to a rack to cool completely.

 

They come out crisp on the edges, chewy inside, and full of coconut flavor — perfect for gifting or tea time.
