Ingredients:
1 lb large shrimp, peeled and deveined
1 lb smoked sausage, sliced
3 medium potatoes, peeled and cut into chunks
1 medium onion, diced
3 cloves garlic, minced
4 cups chicken broth
2 cups water
1 teaspoon paprika
1/2 teaspoon thyme
1/2 teaspoon cayenne pepper (optional)
1 tablespoon olive oil
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
1. In a large pot, heat the olive oil over medium heat. Add the sausage slices and cook until browned on both sides, about 5 minutes. Remove and set aside.
2. In the same pot, add the diced onion and garlic. Cook until softened and fragrant, about 3 minutes.
3. Add the chicken broth, water, paprika, thyme, cayenne pepper (if using), and potatoes to the pot. Stir well and bring to a boil. Reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
4. Add the shrimp and cooked sausage back to the pot. Simmer for an additional 5-7 minutes, or until the shrimp are cooked through and pink.
5. Season with salt and pepper to taste.
6. Serve the stew hot, garnished with fresh chopped parsley. Enjoy!
