Zucchini Bread (Healthy & Delicious)

Ingredients:

1 ½ cups shredded zucchini (do not squeeze out moisture)

¼ cup sliced green onions (optional — adds a lovely savory note)

2 large eggs

½ cup olive oil (or melted coconut oil)

¼ cup plain yogurt or milk

1 cup whole wheat flour (or all-purpose flour)

½ cup oat flour (or ground oats)

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp garlic powder (optional for savory flavor)

½ cup shredded cheese (optional — cheddar or mozzarella work great)

1 tbsp chopped fresh herbs (parsley, basil, or dill)

 

Instructions:

1. Preheat your oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.

2. In a large bowl, whisk together the eggs, olive oil, and yogurt (or milk).

3. Add the shredded zucchini and green onions, stirring to combine.

4. In another bowl, mix the dry ingredients: whole wheat flour, oat flour, baking powder, baking soda, salt, and garlic powder.

5. Combine the wet and dry mixtures until just blended — do not overmix.

6. Fold in shredded cheese and herbs if using.

7. Pour the batter into your prepared loaf pan and smooth the top.

8. Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.

9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
